Effortless Morning Breakfast Muffins

This recipe can be used as a base for all your breakfast muffins!

Ingredients: 

For the muffins:                                                                  

  • 1 1/2 c. Flour                                                            
  • 1/2 c. White Sugar
  • 1 1/2 tsp. Baking Powder
  • 1/4 tsp. Nutmeg
  • 1/8 tsp. Salt
  • 1 Egg
  • 1/2 c. Milk
  • 1/3 c. Butter, Melted
For the topping:
  • 1/3 c. Butter, Melted
  • 1/4 c. White Sugar
  • 1 tsp. Cinnamon

Directions: 

Preheat the oven to 350 degrees. In a medium bowl combine flour, sugar, baking powder, nutmeg, and salt. Then create a well in the middle of the flour mixture and add in the egg, milk, and melted butter. Gently mix until the batter is moistened do not over mix. 


In a greased muffin tin fill 3/4 full and place in the preheated oven for 18-24 minutes. 




While the muffins are in the oven, prepare the topping by combining sugar and cinnamon in a bowl. Wait until the muffins are out of the oven to melt the butter.

Once the muffins are done, let them sit for 3-5 minutes and then roll the tops in the melted butter and then in the cinnamon sugar mixture.


Repeat until all the muffins are done. Serve warm and ENJOY!

Memory Lane Chocolate Chip Cookies

Ingredients:

  • 3/4 c. sugar
  • 3/4 c. packed dark brown sugar
  • 2 sticks of butter (melted)
  • 1 egg, 2 1/4 c. all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 12 oz. chocolate chips

Directions: 

Pre-heat oven to 375 degrees. Then mix sugars, butter, and egg in a large bowl. Stir in flour, salt, and baking soda. Finally add the chocolate chips. Drop by spoonfuls on a un-greased cookie sheet and place near the top for 8-9 minutes. Cool on a wire rack and ENJOY!
